I love cinnamon. So I’m happy with this simple little creation.
I used a small glass bowl. If you want to use a mug, make sure it’s a big sized, wide, one.”
MAKE CINNAMON SUGAR:
Mix together ERYTHRITOL 1 Tbsp + CINNAMON POWDER 1/4 tsp. Set aside. ⭐️
CAKE INGREDIENTS:
WHIPPING CREAM 3 Tbsp
BUTTER 28g/2 Tbsp/1 oz
ERYTHRITOL 1 + 1/2 Tbsp
VANILLA EXTRACT 1/4 tsp
ALMOND FLOUR 2 Tbsp
COCONUT FLOUR 2 tsp
BAKING POWDER 1/2 tsp
EGG 1 large beaten
Method:
1. Place 3 Tbsp whipping cream into glass bowl. Mix 1 tsp cinnamon sugar mix into it. Set aside.
2. Sift dry ingredients together into another bowl. Set aside.
3. Put butter into a mug. Microwave for 30 secs until mostly melted. Add erythritol & vanilla, whisk well with fork.
4. Add in sifted dry ingredients & blend well.
5. Add in the egg and blend.
6. Pour batter over cinnamon whipping cream (Btw, I add a bit of cinnamon to the cream when I prep it). Microwave on HIGH for 2.5 to 3 mins.
7. Turn cake out onto plate. Drizzle some heavy cream over it. Sprinkle with some cinnamon sugar.
